Family Pancakes


My family enjoys breakfast anytime of the day! I especially enjoy it because it means that my husband will take a turn with the cooking! He loves to fix breakfast and his favorite recipe to make is my Uncle John's. The trick is that the eggs are separated, making the pancakes extra fluffy!


Sift together:
1 cup flour
1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 Tbsp sugar

Combine with:
1 Tbsp oil
1 cup buttermilk
2 egg yolks

Beat until frothy:
2 egg whites

Add egg whites to the batter.
Cook on a hot, buttered skillet.
Enjoy with your favorite breakfast meat and some fresh fruit!

Here's another family recipe that works great for dinner as well!

German Pancakes (really this is more like an egg cake than a cakey-cake)

Laura's German Pancake!
Melt 6 Tbsp of butter in a 13"x9" pan.
Mix the following ingredients together. It will be slightly lumpy.
Pour them into the pan and bake at 425 degrees for 15-20 minutes.
Serve warm with maple syrup.

1 cup milk
6 eggs
1 tsp salt
