Applesauce Oats & Yogurt Muffins

I made applesauce a few days ago using 2 bags of grocery-store apples I had sitting around... Granny-Smith and Gala, I think.  It was yummy and chunky and wholesome but I had a lot of it and there's only 3 of us humans in the house.  So I searched around for an applesauce muffin recipe and modified it a bit.  Try it, I think you'll like it.

You'll need:
  • 1 c quick oats
  • 1 c plain yogurt
  • 1/2 c applesauce (I used my homemade chunky version)
  • 1 egg, beaten
  • 1 c whole wheat flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 c brown sugar
  • 1/2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 c chopped walnuts
Preheat oven to 375 degrees.  Place foil muffin liners in a 12-cup muffin tin.

Gently stir together the oats, yogurt, applesauce and beaten egg in a medium bowl.

In a separate, large bowl, stir together the flour, baking powder, baking soda, brown sugar, cinnamon, nutmeg, and walnuts.  Add the wet ingredients and combine gently. (Don't overmix.)

Spoon mixture into prepared muffin tins, dividing evenly. 

Bake for 25-30 mins, until set and lightly browned.

Enjoy for breakfast or a snack, with fresh fruit and glass of milk.
