Honey Baked Chicken

My More-with-Less Cookbook is on my kitchen shelf and is well loved. ( If you don't own a copy, I encourage you to go ahead and remedy that situation!)  This chicken recipe is tasty, easy, and can be successfully used with whatever kind of chicken you have on hand!

I think this recipe works great with chicken thighs but the original recipe calls for a cut-up 3 lb chicken so go ahead and do it that way if you want.  You could also try chicken breasts (if you  have a good source) but obviously, if they are boneless and skinless you will have to shorten the cooking time.  Start checking for done-ness after the 30 minute mark, I would say.

Honey Baked Chicken

Serves 6-8

You'll need:

6-8 chicken thighs (see above note)
1/3 c. butter
1/3 c. honey
2 T prepared mustard
1 t salt
1 t curry powder

Arrange the chicken in a shallow baking dish, skin-side up.  Melt the butter in a microwave-safe glass bowl.  Add the honey, mustard, salt, and curry powder to the bowl and whisk together until completely combined. Pour the mixture evenly over the chicken pieces and bake in a 350 degree oven for 1 1/4 hours, basting every 15 minutes, until the chicken is tender and has a lovely golden brown glaze.
