Celebrate Pancake Tuesday

Today is traditionally known as Shrove Tuesday or Fat Tuesday.  It is the day preceding Ash Wednesday which marks the beginning of Lent.  (Read more about it here.)  In some countries it is also called Pancake Tuesday because of the tradition of eating pancakes for dinner.  So how about serving your family a yummy meal of homemade pancakes for dinner tonight?  Who doesn't love breakfast for dinner?

Sift together:
1 cup flour
1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1 Tbsp sugar
Combine with:
1 Tbsp oil
1 cup buttermilk
2 egg yolks
Beat until frothy:
2 egg whites
Fold egg whites into batter.
Cook on a hot, buttered skillet.
Enjoy with your favorite breakfast meat and some fresh fruit!

Here's another family recipe that works great for dinner as well!

German Pancakes (really this is more like an egg cake than a cakey-cake)

Turn the oven to 425 degrees.
Melt 6 Tbsp of butter in a 13"x9" pan, in the warming oven. 
Mix the following ingredients together. 
It will be slightly lumpy. 
Remove baking pan from the oven (butter should be melted by now.)
Pour the mixture into the pan and bake at 425 degrees for 15-20 minutes.
Serve immediately with maple syrup or your favorite pancake topping.

1 cup flour
1 cup milk
6 eggs
1 tsp salt
