So you have a lot of cucumbers. Holy cow. What are you going to do with all of them?
Take a large chinese cucumber (12") or 2 6" traditional cukes. Don't peel them - but slice them uber thin in your food processor or mandolin slicer.
Salt them, to bring out the water.
Sprinkle them liberally with dill.
Stir in all natural, PLAIN yogurt. 1/2 a cup or so. Stir in a couple tablespoons of Rice Vinegar. Let sit for a couple hours in the old fridgerator.
Totally yummers. Enjoy the fresh and cool taste of summer.
