Cook 17-18 oz of medium sized pasta according to the directions. Set aside.
Chop up a package of smoked sausage or polish sausage or bratwurst (whatever you like--or you can leave this part out if you want a meatless meal).
Melt 2 Tbsp of butter in a saucepan. Turn off the heat and add 1/4 cup flour, 1 tsp salt, 1/4 tsp pepper and 1/2 to 1 tsp of ground mustard. Stir up until well mixed and smooth. Then slowly add 2 1/2 cups of milk, stirring as you pour so you can avoid lumps. Once that is all stirred together, turn the heat back on and bring it to a boil--stirring the whole time. Boil this until it is thick, about one minute. Turn off the heat and stir in 2 cups of SHARP cheddar cheese. For added fun, I also stirred in about a cup of pureed cauliflower. Sshh, don't tell my family!!!
Dump everything together in the saucepan, mix it up and pour into a casserole dish. I topped mine with a little breadcrumbs and parmesan cheese.
Bake at 350 degrees for 30 minutes.
