(Sunday) Morning Glory Muffins


My boys woke up sick this morning, so we are staying home from church as a family. I thought I would whip up some yummy muffins to hopefully motivate healing! This recipe is adapted from the Manchester Highlands Inn in Manchester, Vermont recipe for:

Morning Glory Muffins, yield: 16 muffins

2 cups flour
1 1/4 cups sugar
2 tsp baking soda
2 tsp cinnamon
pinch of salt
2 cups grated carrots
1 cup raisins
1 apple, peeled and grated
3 eggs
1 cup oil
2 tsp vanilla extract

Preheat oven to 350 degrees.
Mix together the dry ingredients and stir in the carrots, raisins and apple. In a separate bowl, beat the eggs with the oil and vanilla. Add to flour mixture and combine well. Spoon the batter into greased muffin tin and bake 30-35 minutes. Smells AWESOME!
