Here's a quick idea that I came up with for serving what can sometimes be a pretty bland fish...
Bake the fish until it is "fork tender" -- which basically means that you can take the back of a fork and press it down on top of the fish. If it flakes, it's done. If it doesn't... leave it in there for a few more minutes. I baked mine on a stone at 350 degrees with a bit of oil and seasoning salt.
While it was cooking (cause it doesn't take long!) I diced some avacado.
When it's time to serve the fish, put some salsa and avacado on top! Delish!
I served mine with some oven roasted red potatoes and corn. Even the kidlets ate it!
